Persimmons

There are two commercial varieties of persimmons, both bright orange in colour and Asian in origin. Hachiya, which are eaten when soft, and Fuyu, which are eaten when firm like an apple. 90% of the Persimmons you find in grocery stores are Hachiya. They have a powerfully sweet flavor and an extra-juicy texture. They are shipped firm to protect from damage but before eating, they need to be allowed to ripen to a "squishy-soft" texture. Ripen firm persimmons at room temperature in a loosely closed bag. Ripe fruit may be stored unwashed in the refrigerator in a plastic bag or frozen. To eat, simply cut off the top and eat the pulp from the skin with a spoon. Try it spooned over vanilla ice cream as a dessert or add to a fruit salad for an exotic flavour.
