Prickly Pears (Cactus Pears)

Prickly pears are fruit from the nopales and opuntia cacti. They are actually berries, not pears and are full of edible, crunchy seeds. The skin can be either green or magenta and the flesh can be brilliant fushia, crimson or orange. Some varieties taste like watermelon and others are more tart. Allow prickly pears to ripen at room temperature until soft at which time they can be refrigerated for up to a week. To eat, peal by cutting the ends off and scoring the skin lengthwise. Sliding the knife under the skin, peel the skin off. Always serve prickly pear chilled. Enjoy in salads or tropical drinks.
