Flavour vinaigrette with such things as herbs, garlic, shallot, citrus zest, spices, salt and pepper. To ensure your vinaigrette emulsifies, also always add some Dijon mustard.
Put the "vinaigre" into vinaigrette by mixing in an acid ingredient, such as vinegar or lemon juice.
Now slowly whisk in oil, such as extra virgin olive oil for a strong flavor; grapeseed or sunflower oil, for a mild flavour; or nut oil, for nutty taste.
