How to Pan Sear Steak

We love a good steak! But once the BBQ goes away and summer is long gone, many find other alternatives. Learn how to perfectly pan-sear a steak to enjoy year round.

Step 1:

Bring 1" thick, strip loin steaks to room temperature by leaving out for one hour. Pat steaks dry then very lightly brush with olive oil (don't smother in oil, as the steaks melting fat will prevent sticking and encourage proper searing). Season steaks with coarse sea or kosher salt and black pepper.

Step 2:

Set a cast iron or other heavy skillet over medium-high heat. Let sit a few minutes, until very hot. Add steaks and cook to desired doneness, about 3 to 4 minutes per side for rare to medium rare

Step 3:

Let steaks rest a few minutes, to allow juices to set, and then enjoy. Note: If using an instant-read thermometer, insert into the thickest part of the steak. A rare steak will be about 120˚F, medium-rare will be 125˚F, and medium will be 135˚F.
