How to Prepare Romanesco for Cooking

Vibrant-green romanesco is a member of the brassica family and is related to plants such as cauliflower and broccoli. The step-by-step photos and information below will guide you on how to prepare it for cooking.

Step 1:

Pull off any leaves attached to the bottom and sides of the romanesco.

Step 2:

With a sharp paring knife, remove the core from the romanesco as would on a cauliflower.

Step 3:

You could steam the whole romanesco until just tender, about 10 to 15 minutes depending on size. Once cooked, set the whole romanesco on a plate, drizzle with lemon juice and melted butter or olive oil, sprinkle with salt and pepper, and serve as a side dish.

Step 4:

The cleaned head of romanesco could also be cut into large or small florets and be boiled, steamed or roasted until tender and serve as a side dish. The florets of romanesco can also be added to other dishes, such as pastas or stir-fries. Those florets could also be eaten raw with a dip, or be added to a salad.
