How to Stuff a Chicken Breast

Step 1

To help chicken sit flat as it cooks, remove the fillet (a thin strip of loosely attached meat) running down the centre of the breast, by gently pulling it off. Save that piece for another use. Now cut a deep horizontal slit through the thickest portion of the breast, without cutting all the way through.

Step 2

Open the chicken breast up. Season the inside parts with salt and pepper. Now tightly pack and stuff each breast with your filling.

Step 3

Firmly press each chicken breast back together to help hold the filling inside. It’s ok if some filling shows out the side. Cook chicken as described in our Gouda, Mushroom and Kale-stuffed Chicken  Breast recipe.
