All-Purpose Barbecue Rub

Combine 1/4 cup chili powder, 2 Tbsp. ground cumin, 1 Tbsp. oregano, 2 tsp. smoked paprika, 1 tsp. cayenne pepper, 2 tsp. coarsely ground black pepper, 2 tsp. coarse sea or kosher salt, 4 tsp. granulated sugar, 1 tsp. onion, and 1 tsp. garlic powder. Store in a tightly sealing jar. Makes 3/4 cup. Use on just about anything barbecued, such as ribs, kebabs, steaks and chicken.

Salmon Rub

Combine 2 Tbsp. brown sugar, 1 tsp. chili powder, 1/2 tsp. smoked paprika, 1/2 tsp. coarse sea salt, 1/2 tsp. coarsely ground black pepper, 1/4 tsp. ground cumin, 1/4 tsp. garlic powder, and 1/4 tsp. ground sage. Store in a tightly sealing jar. Makes 1/3 cup enough for 12 salmon fillets or steaks.

Pie and Crumble Spice

Combine 6 Tbsp. ground cinnamon, 2 tsp. ground nutmeg, 2 tsp. ground ginger, 1 tsp. ground allspice and 1 tsp. ground cardamom in a bowl. Store in a tightly sealing jar. Makes 1/2 cup. Use this spice to flavour pie fillings, such as apple and pumpkin, and toppings for crumbles or crisps.
