Method

Preheat oven to 350 degrees F. Grease a 9"x5" inch loaf pan with butter or vegetable spray. Place the flour, baking soda, salt, spices, cranberries and walnuts in a bowl and mix to combine. In another bowl, beat the butter and sugar together until well combined. Beat in the eggs and apple sauce. Add the dry ingredients to the wet and mix until just combined. Spoon the batter into the loaf pan; bake for 60 to 70 minutes, or until a toothpick inserted into the centre of the loaf pulls out clean. Cool in the pan on a baking rack for 15 minutes before unmoulding.

Serving Suggestions

Serve this loaf for as a afternoon snack with a hot cup of Alex Campbell Signature Series Coffee or Tea. Or, make a plated dessert by setting a slice or two of the loaf on a dessert plate with a scoop of a flavoured ice cream alongside, such as candied ginger, maple walnut, or caramel. Garnish with a mint sprig and serve.
