Method

  1. Place the first 9 ingredients in a small pot and whisk to combine. Set over medium-high heat, bring to a simmer for 1 minute. Remove sauce from heat, cover and set aside.
  2. Preheat barbecue to medium-high, until about 425˚F in the chamber. Lightly brush each pineapple slice with vegetable oil. Grill pineapple on one side for 1 minute, and then flip over. Move the pineapple slices to one side of your barbecue.
  3. Set a piece of salmon, skin-side-down, in the centre of each pineapple slice. Brush the top of each fillet with about 1 1/2 tsp. of sauce in the pot. Turn the heat off directly under the pineapple slices; leave other side of barbecue on at medium-high. Close lid of the barbecue and cook salmon 12 to 14 minutes, or until just cooked through.
  4. When salmon is cooked, bring remaining sauce back to a simmer. Set a piece of salmon-topped pineapple on each of 4 plates. Drizzle salmon on each plate with some of the remaining sauce, garnish with cashews, green onion and lime wedges, and serve.
