Place the first 8 ingredients in a small bowl and whisk to combine. Refrigerate dressing until needed. Divide and set grapefruit slices on the outer edges of 4 salad plates. Divide and mound salad greens in the centre of each of plate. Top each salad with cranberries and grated carrot. Drizzle each salad with dressing and serve.
