Method

Preheat the oven to 425 degrees F. Line a shallow baking dish with parchment paper. Set in the fish in a single layer. Combine the mustard, dill, honey and lemon juice in a bowl. Spread over the fish; season with salt and pepper. Bake for 12-15 minutes, or until cooked through.

Serving Suggestions

Steamed asparagus drizzled with lemon juice, mini new potatoes tossed with butter and chives, and boiled baby carrots, tossed with pinches of nutmeg, clove and cinnamon, would all nicely accompany the fish.
