Preheat the oven to 425 degrees F. Line a shallow baking dish with parchment paper. Set in the fish in a single layer. Combine the mustard, dill, honey and lemon juice in a bowl. Spread over the fish; season with salt and pepper. Bake for 12-15 minutes, or until cooked through.
Recipe Options: Try another salmon fillet in this recipe, such as Coho or Sockeye. If you like the coarse texture of grainy Dijon mustard, then use it instead of regular Dijon. If you prefer the taste of maple syrup, then substitute it for the honey called for in the recipe. If you like the licorice-like taste of fresh tarragon, then chop and use an equal amount of it, in the recipe instead of the dill.
