Preheat oven to 425 degrees F. Brush a shallow-sided baking dish with a little of the oil, and then arrange fish, asparagus and tomatoes in it. Drizzle with remaining olive oil and the lemon juice. Season with salt and pepper. Cover and bake 10 minutes. Uncover and sprinkle on shrimp and chopped herbs. Bake, uncovered, for 5 more minutes, or until cod is cooked through. Arrange fish and other dish ingredients on 4 heated plates. Serve with steamed rice or new potatoes.
*Note: To blanch asparagus, plunge in boiling water 2 minutes, cool in cold water, and then drain well.
