Place all ingredients, except dates, in a bowl and mix to combine. Line a baking sheet with plastic wrap. Moisten your hands with cold water. Shape tablespoon amounts of the cheese mixture into 18 small oblong balls and set on the baking sheet. Refrigerate until needed.
Make a lengthwise slit in one of the dates and pull out the pit. Repeat with remaining dates. Open up one of the dates and set a ball of the cheese mixture into it. Gently squeeze the date to hold the filling in place, and then set on a serving platter. Repeat with remaining dates and filling. Cover and refrigerate until ready to serve. Can be made several hours before needed.
Note: Large and easy to pit Medjool dates are available in the produce department.

Serving Suggestions

If you're creating a large cheese platter or board for a party, set a selection of cheeses on it, such as sharp cheddar, creamy Brie, aged Gouda and tangy goat. Decorate the platter or board with fresh fruit, crackers and, to kick things up a notch, these wonderful blue cheese and nut stuffed dates.
