Method

  1. Preheat oven to 325°F. Place chicken in a roasting pan. 
  2. Combine oil, cayenne, clove, cinnamon, ginger, pepper, salt and thyme in a small bowl. Brush mixture all over the chicken.  
  3. Make basting sauce by combining lime juice, sugar and rum in a second small bowl.  
  4. Roast chicken, basting with sauce every 20 minutes, for 90 minutes, or until chicken's temperature in the deepest part of the thigh registers 185°F on a meat thermometer. Rest chicken 10 minutes before carving.
