Preheat the oven to 350 degrees F. Lightly grease 2 nonstick 4 1/2" x 8 1/2" loaf pans.
Combine the apple sauce, sugar, eggs and vanilla in bowl. Place flour, baking soda, baking powder, salt and spices in a second bowl and whisk to combine. Mix in the carrots, dried fruit and pecans. Mix the flour/carrot mixture into the wet mixture until just combined. Spoon the batter into loaf pans.
Bake for 55 minutes, or until loaves spring back when gently touched in the centre.
