Combine the first 7 ingredients in a large bowl. Mix in the chicken, prunes, olives, capers and bay leaves. Cover, refrigerate and marinate chicken 8 hours, or overnight.
Preheat oven to 350 degrees F. Spoon chicken mixture including liquid into a large, shallow roasting pan. (The pan used to test this recipe was 14" long and 12" wide.) Season the chicken mixture with salt. Roast, uncovered, for 35 to 40 minutes, or until chicken is cooked through.
Transfer chicken mixture to a serving vessel, sprinkle with parsley or cilantro, and enjoy.
