Place oil in a large, non-stick skillet or wok set over medium-high heat. When hot, add chicken and stir-fry 3 to 4 minutes, until just cooked through. Remove from the pan and reserve. Add the broccoli, bell pepper, garlic and ginger to the pan and stir-fry 2 minutes. Add teriyaki sauce, orange juice mixture and water and bring to a simmer. Return chicken to the pan. Toss and simmer 1 to 2 minutes more, and then serve.

Note: The teriyaki sauce used in this recipe was Kikkoman brand.

Recipe Options: Make pork and broccoli stir-fry by replacing the chicken breast with an equal weight of pork tenderloin, sliced into strips. Make spicy stir-fry by adding hot Asian-style chili sauce, to taste, when pouring in the teriyaki sauce mixture. Instead of orange, try another type of fruit juice in this recipe, such as unsweetened pineapple juice.
