Chicken Enchiladas

Season chicken with salt and pepper. Cook in olive oil in a skillet over medium-high heat. When cooked through, place in a bowl. In another bowl, combine tomato sauce, spices and salt and pepper to taste. Spoon half this mixture and half the cheese in with the chicken. Place an equal amount of chicken mixture along the centre of each tortilla, and then roll into a cylinder. Place on a parchment paper-lined or non-stick baking sheet, spacing them about two inches apart. Top with remaining sauce and cheese. Bake in a 375 degrees F oven 20-25 minutes.
