Method

To make the Louis sauce, combine the mayonnaise, cocktail sauce, lemon juice and hot pepper sauce in a small bowl. Divide the greens between 4 martini or other decorative glasses and hook 6 shrimp on the rim of each glass. Spoon the sauce into the centre of the glass. Garnish with lemon slices and parsley or other herb sprigs and serve.
