Method

Heat the oil in a large soup pot over medium-high heat. Add the onion, carrot and garlic and cook 3-4 minutes. Add the remaining ingredients and bring to a boil. Adjust heat so soup gently simmers; cook 20-25 minutes, until cabbage and potatoes are tender. Adjust seasoning and serve.
