Preheat the oven to 350 degrees F. Place the roast in a roasting pan; season with salt and pepper. Roast 1 hour and 20 minutes. 15 minutes before it reaches this point, place the glaze ingredients in a pot and bring to simmer.
Stir to melt and mix the marmalade into the other ingredients, then remove from the heat. When the pork has cooked 1 hour and 20 minutes, brush with 1/3 of the glaze. Roast 10 minutes more, brush with 1/3 more of the glaze. Roast 10 minutes more, brush with remaining glaze. Roast 10 minutes more or until the internal temperature of the meat has reached 160 degrees F. Let roast rest 10 minutes before slicing. Serve with apple sauce or gravy made from the juices in the pan, if desired. Note: Pomegranate juice is sold in the produce department.
