Method

  1. Combine the melted butter, curry powder, and lemon juice in a shallow bowl. Add the cod and turn to coat.  
  2. Layer the potatoes, onions, and carrots in a 10-inch skillet; season lightly with salt and pepper. Pour in the stock. Set over medium-high heat and bring to a simmer. Tightly cover, lower the heat to medium, and cook until the potatoes are firm/tender, about 10 minutes. 
  3. When the potatoes are firm/tender, set the cod on top of them. Tightly cover and cook 5 minutes more, or until the cod is just cooked through. 
  4. Uncover and sprinkle in the peas and let them heat through for 1 minute. Divide the fish and vegetables among plates. Spoon the liquid in the skillet over top and serve.
