Method

Cook the noodles according to the package directions. Cool in cold water and drain well. Toss with the sesame oil and set aside. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic, ginger, onion, bell pepper, celery, gai lan and corn and stir-fry for 3-4 minutes. Mix in the curry powder and cook 1 minute more. Add the stock and bring to a simmer. Mix in the reserved noodles and heat through. Mix in the beans spouts and green onions and serve.

Serving Suggestions

Serve the noodles with your favourite Asian-style sauces, such a sweet chili, spicy chili, oyster or plum. If desired, also include bowls of cashews, chopped cilantro, chopped shallots and thinly sliced, hot red chilies for diners to sprinkle on top of chow mien as they wish.
