Preheat the barbecue to medium-high. Layer two sheets of foil 18 inches long. Set the trout in the centre of the foil, spacing them an inch or two apart. Drizzle and sprinkle with remaining ingredients. Fold the foil loosely over the fish and crimp to seal. Set the package on the barbecue; close the lid and lower the heat to medium. Cook the trout 15 to 20 minutes, or until cooked through.

Serving Suggestions

Serve the trout with colourfull, in-season vegetables, such baby new potatoes tossed with butter and chives, corn on the cob, and sauteed zucchini rounds and half cherry tomatoes scented with garlic and fresh herbs.
