Cook the box of freekeh as per package instructions. Spoon it into a large salad bowl; cool to room temperature. Add the remaining ingredients and toss to combine. Cover and refrigerate salad until ready to serve. Salad can be made a few hours before needed. Toss again gently before serving.
Note: Freekeh is wheat that is harvested while it’s still green, roasted, and then dried. It is smoky and nutty tasting and full of vitamins and minerals. It’s sold in our ethnic foods aisle. Diced in this recipe means to cut into 1/4” to 1/2” cubes.
