Allow the frozen dessert product to soften at room temperature about 10 minutes.
Now set a double chocolate chip cookie on a work surface, smooth side up. Set a 1/4 to 1/3 scoop of frozen dessert product on the cookie. Set a chocolate chip cookie on top of the frozen dessert product, smooth side down. Gently press cookies together to form a sandwich. Place the sandwich on a baking sheet and set in the freezer. Repeat these steps with the remaining cookies and frozen dessert product. When the frozen dessert product is completely frozen again, individually wrap each sandwich and keep frozen until needed.

When testing this recipe, Luna and Larry’s Coconut Bliss brand frozen dessert product was used. One (473 mL) tub should yield what you need for this recipe.
