Use a vegetable peeler to trim a little from the curved side of each piece of celery so they sit flat. Neatly as you can, divide and spread goat cheese into each piece of celery. Set the celery on a serving plate. Divide and nestle some cranberries and almonds into the goat cheese on each piece of celery. Cover and refrigerate until ready to serve. Can be prepared a few hours in advance.
Note: To toast the almonds, place them in a single layer in a small baking pan. Bake in a 300 degrees F oven for 10 minutes, or until lightly toasted.
