Method

Place the first six ingredients in a pot and bring to a simmer over medium heat. Gently simmer 5 minutes, stirring occasionally. Add the prawns and cook 3-4 minutes more, or until the prawns are cooked through. Stir in the cilantro, season with salt, and serve.

Serving Suggestions

Steamed rice, mango chutney and slices of cucumber, onion and tomato would go nice with prawns.
