  1. Preheat barbecue or indoor grill to medium-high. Place first 8 ingredients in a small pot and whisk to combine. Set pot over medium-high heat and bring to a simmer. Simmer sauce until it lightly thickens, about 2 minutes. Stir in the blueberries and pepper and cook 1 minute more. Remove sauce from the heat, cover and set it aside for now.
  2. Brush chicken with oil; season with salt and pepper. Lightly oil the bars of the grill. Grill the chicken 3 to 5 minutes per side, or until cooked through. When chicken is almost cooked, return blueberry sauce to a simmer.
  3. Plate the cooked chicken. Allow diners to top their portion of chicken with the blueberry sauce, to taste.

Recipe Options: Beyond chicken breast, you could also make and spoon the blueberry balsamic sauce over grilled chicken thighs, pork chops, bison steaks and salmon fillets.

To make blackberry balsamic sauce, simply replace the blueberries with an equally amount of fresh blackberries.
