Method

Place the first 12 ingredients in a salad bowl and toss to combine. Refrigerate salad until needed.
Preheat your grill to medium-high. Combine the 2 Tbsp. oil, 1/2 tsp. cumin, 1/2 tsp. chili powder in a medium bowl. And the chicken, season with salt and pepper, and toss to coat. Grill the chicken 4 minutes per side, or until cooked through. Serve chicken with the salad.

Serving Suggestions

Once plated, dollop some sour cream or thick yogurt alongside the chicken and salad. Accompany all with some steamed rice, or a flavoured rice, such as the Spanish-style Rice you’ll find in our website recipe collection.
