- Make seasoning mixture by combining the chili powder, cumin, oregano and cayenne in a small bowl. Coat fish with 1 Tbsp. oil, and sprinkle each side with seasoning mixture and salt.
- Preheat an indoor grill or barbecue to medium-high. While it heats up, divide rice between 4 shallow bowls. On the side of each bowl, mound equal amounts of avocado, corn, tomatoes and beans.
- Grill fish 3 to 4 minutes per side, or until just cooked through. Set a piece fish on top of the rice on the other side of each bowl.
- Add salsa and sour cream to each bowl, garnish with lime slices (or wedges) and cilantro, and serve. Serve the bowls with Fresh is Best tortilla chips.
Recipe Options: Instead of fish, top the taco bowls with grilled prawns or grilled and sliced chicken or steak. Instead of rice, spoon cooked quinoa in the bowls. Instead of sour cream, use yogurt.
