Combine the first 7 ingredients in a sided dish just large enough to hold the meat. Add the steak, turn to coat, and marinate in refrigerator for 4 hours or overnight, turning occasionally. Preheat grill to medium-high heat. Remove steak from marinade; discard marinade. Lightly oil grill and then grill steak to desired doneness; allowing 2 to 3 minutes per side for rare; 3 to 4 for medium rare; and 4 to 5 for medium.

Note: Herbes de Provence, a dry mix of French-style herbs, can be found in small jars in the aisle spices are sold.

Serving Suggestions

The time of year will dictate what you serve with the steak. In summer months, a baked potato and one of the Caesar salads you’ll find in our recipe collection would be good side dishes to serve. In winter months, try it with French fries or garlic mashed potatoes; a broiled tomato; and some zucchini sautéed with garlic and herbs.
