Brush the pita bread lightly with olive oil. Grill lightly on both sides. Preheat the oven to 400 degrees F. Spread one side of the pita with pesto, saving a little bit to dot the top. Top the pesto with yellow or orange tomato slices. Arrange and divide the shrimp, goat cheese and cherry tomatoes on the pesto. Dot the top with the remaining pesto; drizzle with a little extra virgin olive oil. Bake 8 to 10 minutes, or until just heated through.
