Method

Place the first 8 ingredients in pot and set over medium heat. Bring the mixture to a gentle simmer and cook, uncovered, until the apricots break down and a chunky sauce forms, about 5 minutes. Remove from the heat and set aside. Heat your grill to medium-high. Brush the pork with the oil; season with salt and pepper. Grill the chops for 3 to 4 minutes per side, or until just cooked through. Set the pork on plates, spoon the sauce alongside and serve.

Serving Suggestions
