Place apples, water, lemon juice and, if using, the sugar, salt and cinnamon, in a pot and set over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the apple slices cook, break apart and dissolve into a sauce, about 15 to 20 minutes. Cool the sauce to room temperature, transfer it to a tight-sealing container and refrigerate until needed.
Preheat your grill to medium-high. Brush the pork chops with the oil. Season and rub chops with sage, paprika, salt and pepper. Grill chops 3 to 4 minutes per side, or until cooked through. Plate the chops and serve with the apple sauce.
Note: This recipe makes about 2 cups of apple sauce. Any leftover sauce will keep in the refrigerator at least a week; it could also be frozen.
