Cook the noodles in boiling water until just tender, about 5 to 6 minutes. While they cook, combine the soy sauce, 1 Tbsp. vegetable oil, lime juice, honey, ginger and chili sauce in a salad bowl. When the noodles are cooked, cool in ice-cold water, and then drain well. Add them to the salad bowl along with the carrot, cucumber, bell pepper and green onion and toss to combine. Cover and refrigerate until needed. Preheat your grill to medium-high. Brush the prawns with the 2 Tbsp. of oil; season with salt and pepper. Grill 1 to 2 minutes per side, or until just cooked through. Divide the soba noodles among 6 plates. Set two prawn kebabs on each plate, garnish with lime slices, and serve.

Serving Suggestions

Serve this dish with small bowls of other ingredients you can sprinkle or drizzle on top at the table, such as chopped fresh cilantro, toasted sesame seeds, finely chopped, fresh hot chillies, and wedges of lime for squeezing.
