Combine the salsa ingredients in a bowl. Cover and store in the fridge until needed. Preheat an indoor or outdoor grill to medium-high. Brush the salmon with the 1 Tbsp. of vegetable oil; season with salt and pepper. Lightly oil the bars of the grill. Grill the salmon 3-4 minutes per side, or until just cooked through. Set the salmon on plates, top with a generous spoonful of the salsa, and serve.
