Trim the tops off the carrots, leaving an inch of green stem. Scrub them well, but do not peel. Place the carrots in a pot, cover with cold water and bring to a boil. Boil for 3 to 4 minutes, or until firm/tender. Drain well, cool in ice-cold water and drain well again. Gently pat them dry with paper towel. Preheat your grill to medium-high. Combine the honey, citrus juices, and ginger in a small bowl. Brush the carrots with olive oil and season with salt and pepper. Grill 3 to 4 minutes, or until lightly charred. Arrange on a platter and drizzle with the honey mixture. Serve warm or at room temperature
