Carefully cut the corn kernels off the cob and place them into a medium bowl. Add the remaining relish ingredients and stir to combine. Cover and store the relish in the fridge until the salmon is cooked. Preheat your grill to medium-high. Brush the salmon with the oil; season with salt and pepper. Lightly oil the grill. Grill the salmon for 3-4 minutes per side, or until just cooked through. Place the salmon on plates, top with a generous spoonful of the relish and serve.
