Place the beets in a pot, cover with 2” of cold water, and gently boil until tender. Cool the beets in cold water and then peel. Cut the beets into small cubes and place in a bowl. Place the remaining ingredients in a skillet and simmer to dissolve the sugar. Add the beets and simmer 5 minutes, stirring occasionally, and then serve.
