Preheat the oven to 350 degrees F. Line a muffin tin with large paper baking cups. Beat the butter and sugar until light. Mix in the honey, eggs, buttermilk and vanilla. Whisk the flour, baking powder and salt together in a bowl. Mix into the wet ingredients. Divide the batter among the paper cups. Bake 20 to 25 minutes. Cool to room temperature, and then arrange cupcakes on a plate. Beat the whipping cream until stiff peaks form; sweeten with icing sugar if desired. Divide and dollop the whipped cream on the cupcakes. Divide and top with the strawberries and serve.
