Preheat the oven to 375 degrees F. Peel the carrots and slice into 1/2” thick coins. Place the carrots in a 9” x 13” baking dish. Toss in the remaining ingredients, except the chives. Roast the carrots, uncovered, stirring occasionally, for 35 to 40 minutes, or until tender. Transfer to a serving dish, sprinkle with the chives, if using, and serve.
