Method

Boil potatoes until tender. While this occurs, cook bacon until crispy, and then drain away fat, reserving 2 Tbsp. Dry the bacon on paper towels. When potatoes are tender, drain well and then place in a bowl. Add bacon, 2 Tbsp. of reserved bacon fat, and the rest of the listed ingredients. Toss to combine. Serve the potatoes hot or at room temperature.
