Beat the cream cheese until light. Mix in the remaining ingredients, except for 1 cup of the cheddar cheese. With cold water dampened hands, form the mixture into the shape of a pumpkin. Place on a serving plate. Create ridges on the sides of your pumpkin with the back of a wooden spoon. Stick the stem from the bell pepper on top of your pumpkin to create a handle. Coat the outside of the pumpkin
with remaining cheese. Refrigerate several hours, until firm.
