Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Cut the fish into 1-inch wide, 4-inch long strips and set on the baking sheet. Combine the oil, lime juice, cumin, chili powder and Tabasco in a small bowl. Brush this mixture over the fish. Season the fish with salt. Arrange the onion and bell pepper around the fish. Bake the fish 12 minutes, or until just cooked through.

Set the tortillas on a work surface. Divide and set the fish, onion and peppers in the centre of the tortillas. Top with the cheese, lettuce and salsa. Fold the sides of each tortilla partially over the filling and then roll into a tight cylinder. Cut each tortilla in half widthwise and enjoy.
