Method

Preheat the oven to 350 degrees F. Grease a 10-inch spring-form cake pan. Place the flour, baking powder, spices and salt in a bowl and whisk to combine. Stir in the cranberries. In another bowl, beat the butter and granulated sugar together. Mix in the eggs and then add the milk. Mix in the dry ingredients. Spoon the batter into the pan. Arrange the mandarin segments on top in spiral-like fashion, pushing them partially into the batter. Bake for 60 to 65 minutes, or until a cake tester inserted in the centre of the cake pulls out clean. Cool on a baking rack and then unmould. Dust with icing sugar before serving.

Cake and ice cream always go well together and that certainly holds true in this case. Indeed, a scoop of vanilla, chocolate, ginger or caramel ice cream would nestle up nicely beside the cake.
