Method

Place the oil in a pot set over medium heat. Add the onion, celery, bell pepper and garlic and cook 3 to 4 minutes. Mix in the remaining ingredients and bring to a gentle simmer. Gently simmer, partially covered and stirring occasionally, for 30 minutes, or until the sauce is richly flavoured. Adjust seasoning to taste and serve.

Serving Suggestions
