Combine all ingredients, except oil for drizzling and mint for sprinkling, in a mixing bowl. Transfer dip to an attractive serving bowl. Cover and refrigerate dip until needed (can be made several hours in advance). When ready to serve, set dip on a plate and drizzle and sprinkle with a little olive oil and chopped mint. Serve dip with such things as crackers, wedges of pita, toasted bread rounds and/or raw vegetables.
