Place all ingredients, except 1/2 cup of the watermelon and the mint, in a food processor and pulse until smooth. Transfer to a medium bowl and stir in the chopped mint. Cover and chill the soup in the fridge for at least 3 hours. Finely dice the remaining 1/2 cup of watermelon. Ladle the soup into ice-cold bowls. Spoon the diced watermelon into the centre of each bowl of soup; garnish each with a mint sprig and serve immediately.

Serving Suggestions

A fun way to serve this soup is from a bowl created from a half, hollowed out, seedless watermelon. Set the half watermelon on crushed iced, fill with the soup, and then ladle the soup into chilled bowls and garnish tableside.
