Preheat oven to 350 degrees F. Lightly coat a 9" x 5" nonstick loaf pan with vegetable oil spray. Cut a piece of parchment the size of the bottom of the pan and set it there. (The parchment will make it easier to unmould the loaf.)

Place bananas, eggs, Wowbutter, oil and sugar in a mixing bowl, or bowl of your stand mixer, and mix well to combine. In a second bowl, whisk together the remaining ingredients. Beat the dry ingredients into the banana mixture until just combined.

Spoon the batter into the loaf pan. Bake 40 to 45 minutes, or until a toothpick inserted into the centre of the loaf pulls out clean. Cool in the pan on a baking rack 15 minutes, and then unmould. Serve warm or at room temperature.

Note: Wowbutter is a nut-free, peanut-butter-like substitute. You'll find it in the aisle peanut butter is sold. Garbanzo and fava bean flour and brown rice flour are available in our baking supply aisle.

Recipe Options: If you're only feeding a few people, slice the loaf and wrap and freeze the slices you don't need. When desired, simply take out the number slices you need and thaw at room temperature.

Serving Suggestions

Slice and serve this appealing loaf with butter or margarine for spreading, and other things that might compliment its taste, whether on the loaf or beside it, such as honey, preserves, or hot cup of tea.
